Shade-growing increases the concentration of L-theanine (an amino acid associated with calm focus), chlorophyll (which gives matcha its vivid green colour), and catechins (including EGCG). Because you consume the entire tea leaf in powdered form, matcha delivers significantly higher concentrations of these compounds compared to steeped green tea.

THE HERITAGE
Matcha has been the centrepiece of Japanese tea ceremony (chanoyu) for over 800 years, brought to Japan from China by Zen Buddhist monk Eisai in 1191. HOW TO USE
Directions: 1–2 grams (approximately ½–1 teaspoon) whisked with 60–80mL of hot water (70–80°C).
- Traditional preparation — sift 1–2g into a bowl, add 60–80mL hot water (70–80°C — not boiling), whisk briskly with a chasen (bamboo whisk) until frothy
- Matcha latte — whisk with a splash of hot water, top with frothed oat or almond milk
- Iced matcha — whisk with a small amount of hot water, pour over ice and plant milk
- Smoothie — blend with frozen banana, spinach, and coconut water
Use water at 70–80°C — boiling water makes matcha bitter. Ceremonial grade is best enjoyed whisked with water or in simple lattes. Store in a cool, dark place and use within 2–3 months of opening for best flavour.
