Vegetarian Cauliflower Fried Rice with Lion's Mane Mushroom
Vegetarian Cauliflower Fried Rice with Lions Mane Mushroom (Gluten Free, Dairy Free, Paleo, Grain Free)
Ingredients:
- 1 large cauliflower grated
- 2 large beaten eggs
- 1 tsp lions mane
- 3 garlic cloves minced
- 1 tbsp lime juice
- 1 tbsp finely chopped fresh ginger
- 4 tbsp tamari sauce or coconut aminos (or both!)
- 1 tbsp fish sauce (paleo optional)
- 1 tsp coconut sugar (optional)
- 1/4 tsp red pepper flakes
- 2 tsp sesame seed oil
- 1 tsp rice vinegar
- 1 cup scallions white and green parts separated
- 1 cup fresh or frozen grated carrots and peas
- Sesame seeds for garnish (optional)
- Salt to taste
Directions:
- Grate your cauliflower in a food processor or using a box grater on the side with the largest holes
- Heat 1 tbsp of olive oil in a large frying pan over medium heat. Add the whisked eggs and a little salt and pepper to your pan. Scramble lightly and set aside in a small bowl
- Add 2 tbsp of oil to your pan over medium heat. Add your white scallions, garlic, and ginger, and cook for 3 minutes or until soft. Add your cauliflower, tamari, sesame oil, lime juice, red pepper flakes, fish sauce, and a pinch of salt. Cook for 3 minutes. Add carrots and peas and cook until softened. Taste and add more seasoning if desired. Add the green parts of the scallions
- Remove from heat, serve and garnish with sesame seeds if desired. Enjoy your delicious Cauliflower fried rice with Lion's Mane mushroom!
