White Bean Chicken Chilli Recipe with Chaga Mushroom
White Bean Chicken Chili with Chaga Mushroom (Gluten Free, Grain Free)
Ingredients:
- 3 cans navy beans (or any other white bean)
- 4-6 cups chicken broth (depending on how thick you like your chilli!)
- 1 large white onion diced
- 4 garlic cloves minced
- 4 tsp Chaga mushroom extract powder
- 1.5 tbs of your favourite oil (we used olive oil here)
- 2 medium poblano or Anaheim peppers seeded and diced
- 1 jalapeño pepper seeded and minced
- 1.5 tbs chilli powder
- 1.5 tbs cumin
- 1 tbs coriander
- 1 tbs Himalayan sea salt ( add more or less to taste)
- 1 rotisserie chicken shredded and skin removed
- 3/4 cup corn
- 2 tbs lime or lemon (or more to taste)
- 1/4 cup cilantro leaves lightly chopped
For garnish:
- 1 scoop of your favourite yoghurt per serving (we used coconut yoghurt here)
- Cilantro
- Chives or spring onion chopped
- Lemon or lime wedges
Directions:
- 1. Start by blending 1.5 cans of white beans in a food processor along with 1/2 a cup of chicken broth. Set aside remaining whole beans and broth for later.
- 2. In a large pot heat oil and add onion, garlic, poblano and jalapeño peppers and sauté about 3 minutes 3. Add cumin, chilli powder, coriander, and sea salt. Continue cooking veggies for another 2 minutes.
- Add chicken broth, puréed beans, and Chaga mushroom. Bring to a boil.
- 5. Reduce heat to simmer and cook for an additional 15 minutes uncovered
- Add chicken, corn, whole beans, lime or lemon juice, and cilantro. Cook for an additional 5 min.
- Add more salt, seasonings, lime or lemon if desired.
- Serve and enjoy your delicious white bean chicken chilli with Chaga mushroom!
